Ingredients
  

Ingredients:

  • 4 medium-sized potatoes peeled and cubed
  • 2 cups chopped spinach leaves
  • 1 onion finely chopped
  • 2 garlic cloves finely chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder adjust to taste
  • Salt to taste
  • 2 tbsp oil

Instructions
 

Directions:

  • Heat oil in a pan and add cumin seeds. Let them splutter.
  • Add chopped onions and garlic and sauté until golden brown.
  • Add cubed potatoes, salt, and turmeric powder. Mix well and cover the pan. Let it cook for 5-7 minutes on medium flame.
  • Once the potatoes are half cooked, add coriander powder and red chili powder. Mix well and cook for another 2-3 minutes.
  • Add chopped spinach leaves and mix well. Cover and let it cook on low flame for 5-7 minutes until the spinach is wilted and the potatoes are fully cooked.
  • Serve hot with roti, paratha, or rice.
  • This recipe can be easily packed for tiffin as it is a dry sabji and does not have much gravy. You can also add some chopped green chili for extra spice. Enjoy!
