- 4 medium-sized potatoes peeled and cubed
- 2 cups chopped spinach leaves
- 1 onion finely chopped
- 2 garlic cloves finely chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder adjust to taste
- Salt to taste
- 2 tbsp oil

Directions:
- Heat oil in a pan and add cumin seeds. Let them splutter.
- Add chopped onions and garlic and sauté until golden brown.
- Add cubed potatoes, salt, and turmeric powder. Mix well and cover the pan. Let it cook for 5-7 minutes on medium flame.
- Once the potatoes are half cooked, add coriander powder and red chili powder. Mix well and cook for another 2-3 minutes.
- Add chopped spinach leaves and mix well. Cover and let it cook on low flame for 5-7 minutes until the spinach is wilted and the potatoes are fully cooked.
- Serve hot with roti, paratha, or rice.
- This recipe can be easily packed for tiffin as it is a dry sabji and does not have much gravy. You can also add some chopped green chili for extra spice. Enjoy!
