Today, we will make it here like a restaurant or as a halwai style Chana Dal Tadka Fry.

Ingredients required to make Lauki wali chana dal Recipe

  • 1 Cup lentils
  • 2 Cup Gourd
  • 1 onion
  • 2 tomatoes
  • 10 garlic
  • 1 Inch ginger
  • 3 green chillies
  • ½ tbsp Turmeric
  • 1 tbsp Salt
  • 3 tbsp mustard oil
  • 1 Green cardamom
  • 1 black cardamom
  • 2 bay leaves
  • ½ tbsp cumin seeds
  • 2 tbsp coriander powder
  • 1 tbsp Garam Masala
  • ¼ tbsp Asafoetida
  • coriander Leaves

Instructions
 

Method of making gourd gram dal

  • First we will take one cup of gram lentils. Will wash it well and then soak it in water for 30 minutes.
  • Then we will take about two cups of gourd chopped, together we will take one onion, two tomatoes, garlic, ginger and green chillies. We will cut all these into small pieces.
  • Together gourd and gram lentils will be cooked for 10 to 15 minutes by adding turmeric and salt in the cooker, so that it becomes soft.
  • After that we will grind tomato ginger garlic in the mixer and make a coarse paste of it.
  • Together we will also grind the onion and make a paste.
  • When our dal is cooked well, then we will mash it well with a churn.
  • Then in a frying pan, we will take mustard oil. will heat it well until the smoke comes. Then add green cardamom, black cardamom, bay leaf and cumin seeds.
  • When our whole spices crackle, then we will put our onion paste in it and fry it well.
  • When we fry the onion, we will put our powdered spices on it.
  • Add two spoons of coriander powder to the powdered spices and mix well.
  • Will put together the red chillies and will roast them all on high flame so that the smokey test will come out well.
  • After that we will also put garam masala in it and mix it.
  • Then put tomato + ginger + garlic + chilli paste in the last and fry it with onion too.
  • When our spices are well roasted then we will add water to the lentils and cook them well for 10 minutes.
  • This makes the spices test come out perfectly and after that we will add the mashed lentils and gourd
  • In the last , we will put green coriander leaves here, and in this way our lentils are prepared.
  • If you want it, you can give butter again with tempering, this will make this lentil exactly like a restaurant and it will be very tasty to eat.
  • To bring the smokey flavor, you put the burning coal in a bowl and put desi ghee on it, it smells very good in it.
